Vegan Christmas Tree Brownies

Fudgy, chocolate-y brownies that look absolutely picture-perfect as Christmas trees! These vegan treats are such a fun activity to make with your kids, but are just as cute to bake yourself and share with friends and family.

I love the idea for these vegan Christmas tree brownies because they’ve got all the classic goodness of a traditional brownie: chunks of vegan chocolate chips, a dense, fudgy middle, and the most unbeatable chocolate taste – they’ve just got a little touch of holiday magic added on top!

Making these brownies

I used my classic vegan brownie recipe as the base for these Christmas tree brownies. If it ain’t broke, don’t fix it – and this vegan brownie recipe promises super fudgy, squishy brownies every single bake.

If you want to mix it up a little and give your brownies an extra touch of holiday magic, you could add:

  • Dried cranberries and walnuts
  • Christmas spices such as cinnamon, cloves, and nutmeg
  • The zest of a clementine
  • Dried fruit soaked in brandy (just be careful they don’t make the batter too wet!)

I left mine as the recipe states, just with chocolate chips – but putting an extra Christmassy spin on your brownies could definitely be a fun experiment!

Decorating your Christmas tree brownies

To decorate my brownies, I didn’t want to just use icing – I find it overly sweet and no one actually enjoys lashings of sugary icing on top of a great baked good!

Instead, I melted vegan white chocolate and slowly added a few drops of green food colouring at a time until I had that perfect bright green for my trees.

Then, pour the green chocolate mix into a ziplock bag and snip a small hole in one of the corners. Pipe the ‘tree’ pattern starting from the tip of the tree and flowing in a curving zig zag to the bottom. My brownies were cold from the fridge when I did this, so the chocolate started to set very quickly – make sure you don’t leave it too long before you add your sprinkle and stars!

Cutting your brownies into perfect tree shapes

There are probably several ways you could get the perfect triangles for your Christmas tree brownies, but here’s how I did it:

  • Remove the brownie from your tin once it has been cooled and refrigerated for at least 2 hours (to help the brownie really firm up before decorating)
  • Cut the brownies width ways into thirds.
  • Separate each third, and then cut each on diagonally to get your tree shapes. Each third should give you about 5 or so Christmas trees – I did end up with a few odds and ends where I couldn’t make a triangle work on the sides.

Vegan Christmas Tree Brownies

These vegan Christmas tree brownies look absolutely beautiful, and are so easy to make! The perfect fun holiday activity to do with your kids, or just a cute Christmas bake to share with friends and family this year.

Ingredients

  • 40g apple sauce
  • 80g coconut oil
  • 2 flax eggs
  • 140g plain flour
  • 60g cocoa powder
  • 200g golden caster sugar
  • 40g coconut sugar
  • 1tsp baking powder
  • 120g vegan chocolate chips
  • pinch of salt
  • 150ml plant-based milk

For the topping:

  • 100g vegan white chocolate (I used Tesco free-from buttons)
  • Green food colouring (~6 drops - I added a couple, stirred, and then adjusted until the colour was to my liking)
  • Vegan white chocolate stars
  • Sprinkles

Instructions

  1. Preheat the oven to 180 degrees C and line a 7 x 7 brownie tin with parchment paper
  2. Make the flax egg by combining 2 tbsp flax seeds and 5 tbsp water and set aside
  3. In a large mixing bowl, combine the flour, baking powder, salt, and cocoa powder
  4. Melt your coconut oil, and then add the oil, apple sauce, sugars, and flax egg to the flour and mix to combine
  5. Slowly add the milk to loosen the batter - you might not need all of the milk if it starts coming together nicely. The mix should be thick but smooth
  6. Fold in your chocolate chips
  7. Bake for 20 - 25 minutes, until there is just a very slight wobble in the centre of the brownies. Allow to cool for 15 minutes, and then place in the fridge for a minimum of 2 hours to allow the brownies to really firm up. I had mine in the fridge overnight - it actually makes the brownies super fudgy the next day!

    Decorating:
  8. Cut your brownie mix into 3 width ways. Separate each third, and individual cut each one diagonally into triangles (each third should give you around 4 - 5 Christmas trees).
  9. In a bowl, melt your vegan white chocolate in the microwave, taking care not to burn it. I do around 30 seconds, stir, and repeat. Allow the white chocolate to cool for a few minutes, then stir in a few drops of green food colouring until it's the colour you are aiming for.
  10. Pipe the green chocolate in a gentle zig-zag starting from the point down to the base.
  11. Decorate with sprinkles and stars at the top of the tree!
