Place a strip of puff pastry down, then lay a strip of bacon over it, in a very narrow X shape. Roll up the sausage from one end to the other. Practice makes perfect!
These vegan pigs in blankets are brushed twice with a glaze of cranberry sauce, thyme leaves, and olive oil for extra festive goodness.
This recipe makes a total of 10 vegan pigs in blankets, but can easily be doubled or tripled to accommodate more people!
Cook your pigs in blankets for at least 12 minutes. The puff pastry should be cooked and golden without the sausages drying out or burning.
