Quite possibly the most delicious black bean burger I've ever eaten; flavor-packed with tangy feta and smoky spices. An easy vegetarian burger recipe perfect for meal prepping.
Peel the onion and garlic and de-seed the pepper, and chop roughly. Place your onion, green pepper, and garlic in a food processor and blitz until chopped into very small pieces.

Heat the olive oil in a pan and add the vegetables, sauteing for 4-5 minutes until soft and fragrant.

Meanwhile, drain and rinse the canned black beans. Place them on a clean tea towel and pat to get the black beans as dry as possible.
400 g canned black beans
Add the black beans to a large mixing bowl and mash them until you have a thick, chunky texture.
Add the vegetable mix to the black beans along with the seasonings, egg, barbecue sauce, feta, and breadcrumbs.

Mix the black bean burger dough until thoroughly combined.
Form the mixture into patties, using about ½ cup of the mixture each. Make the black bean burgers smash patties so they’re wider and thinner, rather than a chunkier patty. You should get about 6 patties.
Place the patties on individual squares of baking paper and refrigerate for a minimum of 30 minutes, or overnight if you prefer.
Heat the oil in a pan and fry the patties until browned and crispy on both sides.
Store leftovers in the refrigerator for up to 5 days.This recipe is perfect for freezing - cook the black bean burgers straight from frozen, allowing a couple of extra minutes.My personal favorite toppings for these black bean burgers are a spicy chipotle mayo, American cheese, shredded ice burg lettuce, tomato, and sliced avocado or caramelized onions.
