Boursin Cheese Pasta

This Boursin tomato pasta is a ridiculously easy weeknight dinner made with just seven key ingredients.

Ingredients

  • 200 g pasta
  • 1.5 tablespoon olive oil
  • 6 veggie sausages skins removed
  • 400 g canned chopped tomatoes
  • 1 block of garlic and herb boursin cheese
  • 0.5 teaspoon chili flakes
  • Salt and pepper to taste

Method

  1. Heat the oil in the pan and add the sausages. Use a wooden spoon to break up the sausages into small crumbles, frying until golden on the outside.
  2. Add the chopped tomatoes, then fill the can about ⅓ full with water and add that to the pan, too.
  3. Add the Boursin cheese and let it melt into the tomato sauce, using your spoon to gently swirl it through the sauce as it softens.
  4. Meanwhile, cook the pasta according to your package instructions. Let the sauce simmer on low heat while the pasta cooks.
  5. Add the pasta to the pan and stir until fully combined and coated in the sauce.

Notes

  • Sausages: Peel skins, crumble with a spoon. Fry until golden.
  • Boursin: Drop in whole, let soften, then swirl through. It does all the seasoning.
  • Tin water: Add ⅓ tin of water with the tomatoes for extra sauce.
  • Storage: Fridge 3 days. Not suitable for freezing.
