  • 1 tablespoon olive oil
  • 1 small red onion diced
  • 2 garlic cloves minced
  • 1 small red pepper diced
  • 1 x 400g canned white beans drained and rinsed
  • 90 ml buffalo hot sauce
  • 100 g sour cream
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon cumin
  • Salt and pepper to taste
  • 150 g shredded cheddar and mozzarella cheese
  • 10 g cilantro chopped finely

Method

  1. Heat the oil in a frying pan over medium heat and add the diced onion and diced red pepper. Sauté for 5-6 minutes, and then add the minced garlic and cook for another minute or two.

  3. As the sauce warms through, use a wooden spoon to crush down about ⅓ - ½ the white beans to create a thicker sauce.

Notes

  • For crispier tacos – Press them gently with a spatula while frying so they make full contact with the pan.
  • Heat control – Dial up or down the cayenne depending on your spice tolerance, or add some diced jalapenos! Just remember the buffalo sauce adds heat too.
  • Make it vegan – Swap the cheese and sour cream for plant-based alternatives.
  • Meal-prep friendly – The bean mixture can be made in advance and stored in the fridge for up to 3 days; just assemble and fry tacos fresh.
