Method
Combine the diced onion and lemon juice in a bowl and let it sit for 5 minutes or so while you combine the other ingredients.
½ red onion, 1 lemon
Then, add the white beans, red wine vinegar, olive oil, and herbs in a bowl and add the red onion and lemon juice mixture.
400 g tin white beans, 2 teaspoons red wine vinegar, 1 tablespoon extra virgin olive oil, ½ teaspoon dry Herbs de Provence
Taste and adjust the seasonings as needed. This simple dish is best left to sit and marinade for 5 - 10 minutes before serving!
Salt and freshly ground pepper
