Preheat the oven to 180 degrees C and line a baking tray with parchment paper
Combine the dry ingredients (flour, baking soda, baking powder, salt)
In a separate bowl, combine the wet ingredients (flax egg, vanilla, sugar, and oil)
Combine the wet ingredients with the dry, and then fold in the chocolate chips. If the mix is too dry, you can add a little plant-based milk to help form the dough.
Use an ice cream scoop to spoon balls of the cookie dough onto your baking tray, and bake for 10 minutes until the cookies are golden.
Allow to cool before decorating
To make the witch's fingers
Scoop a small section out of the middle of the cookie, and add a spoonful of jam
Carve your shortbread biscuit into a rough finger shape, slightly pointed at the end
Ice the biscuit with green icing, using red icing for the end of the finger and nail bed
Place a flaked almond on the tip of the finger, then place the witch's finger in the jam
To make the spider topping
Melt the dark chocolate. Use a spoon or a syringe to line 8 legs and a small circle of chocolate in the centre of the cookie
Press the chocolate balls into the melted chocolate in the centre of the cookie, one behind the other.
Use a dab of melted chocolate to stick your white chocolate chips to one of the balls for eyes, and add a dab of black icing for the eye balls
