Za'atar Potatoes

These easy za’atar potatoes are the perfect potato side dish - crispy on the outside and beautifully seasoned with a za’atar seasoning blend, and fluffy on the inside!

Ingredients

  • 2 medium waxy potatoes
  • 2 tablespoon olive oil
  • 2 tablespoon za’atar
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juice
  • 2 garlic cloves minced
  • 20 g fresh parsley chopped
  • 1 tablespoon red wine vinegar

Method

  1. If you’re using an oven, preheat it to 220C | 428F.
  2. Wash and cube your potatoes, then place them in a pan and cover with water. Parboil for approximately 10 minutes, or until they’re just fork tender.

  3. Drain the potatoes and give the pan a slight shake to rough up the edges.
  4. Drizzle over the oil, cumin, salt, and pepper, and squeeze over half the lemon.

  5. Tip the potatoes into your pan (or air fryer tray).
  6. Cook for 30 minutes in the oven, or 20 minutes in the air fryer at 200C, then remove the potatoes, sprinkle over 1 tablespoon of the za’atar, then place back in the oven for another 20 minutes (oven), or 10 - 15 minutes (air fryer).

  7. Meanwhile, combine your chopped parsley, garlic lemon juice, red wine vinegar, the remaining za’atar, and a drizzle of olive oil in a bowl.

  8. Remove the potatoes from the oven (they should be golden and crispy), then drizzle over the parsley dressing.

Notes

  • Oven Cooking Your Za’atar Potatoes: If you’re cooking your potatoes in the oven, you’ll need to cook them at 428F for about 45 - 50 minutes in total. 25 minutes, then add the za’atar, then another 25 mintues or so.
  • Air Frying Your Za’atar Potatoes: Cooking your potatoes in the air fryer is quicker. Cook them for 20 minutes at 200C, then add the za’atar, then return to the air fryer for 10 - 15 minutes until they’re crispy and golden.
In this recipe, I served my za’atar potatoes with a creamy tahini dip which I got from my local store. You could make your own by blending tahini, water, lemon juice, and garlic.
