A simple and delicious recipe for roasted green beans - a healthy side dish that pairs well with so many meals.

Ingredients

  • 200 g green beans
  • 1 tablespoon olive oil
  • 0.5 teaspoon flaky sea salt
  • 0.5 teaspoon black pepper
  • 1 garlic clove minced
  • ½ lemon zest and juice
  • 10 g fresh parsley diced
  • Optional: Pecorino or Parmesan cheese

Method

  1. Preheat your oven to 425F | 220C and line a baking sheet with parchment paper.
  2. Cut the ends off of your green beans and add them to a mixing bowl.
    200 g green beans
  3. Drizzle the green beans with the olive oil, salt, and pepper (plus any other seasonings you feel compelled to use!) and mix well to ensure the green beans are evenly coated.
    1 tbsp olive oil, 0.5 tsp flaky sea salt, 0.5 tsp black pepper
  4. Spread the beans onto the baking sheet, trying to get one evenly spaced layer.
  5. Bake the green beans for 15 - 18 minutes until they’re turning slightly golden brown and crispy in places.
  6. Scatter over the minced garlic, fresh parsley, and lemon juice/zest (and cheese if using). Serve up immediately!

Notes

Fridge: Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 180°C (350°F) for 5 minutes or in the air fryer for 2 minutes.
Freezer: Not recommended, as roasted green beans lose their crisp texture when frozen. Freeze your green beans from fresh, and then roast them from frozen using my roasted frozen green beans recipe.
