Ingredient Notes
Here’s what makes these roasted green beans stand out, plus some easy swaps:
- Green Beans: Fresh, firm green beans work best.
- Olive Oil: Helps the beans crisp up and develop flavor. You can also use avocado oil or melted butter.
- Flaky Sea Salt & Black Pepper: Enhance the beans’ natural sweetness and crunch.
- Garlic: Adds bold flavor. For an even stronger garlic taste, add it halfway through roasting.
- Lemon (Juice & Zest): Brightens the dish with a fresh, citrusy kick.
- Optional Cheese (Pecorino or Parmesan): Adds a savory, salty finish. Feel free to skip it for a dairy-free version.
Variations & Substitutions
- Make it spicy: Add red pepper flakes or smoked paprika.
- For extra crispiness: Sprinkle with panko breadcrumbs before roasting.
- Cheesy finish: Top with crumbled feta or goat cheese.
- Add nuts for crunch: Try toasted almonds or pine nuts.

How To Make Easy Roasted Green Beans
The full recipe is below, but here’s a step-by-step guide:
1. Prep the Green Beans
Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper. Trim the ends off the green beans, then toss the beans with olive oil, salt, and pepper in a bowl.
Spread them in an even layer on the baking sheet – the more your green beans overlap, the less roasted and crispy they’ll be! If you have a lot of green beans to cook, consider using two baking sheets.

2. Roast to Perfection
Roast the green beans for 15-18 minutes until golden brown and crispy in some areas.
Sprinkle over the minced garlic and lemon zest and juice. Add grated Pecorino or Parmesan (if using) and the fresh parsley. Serve hot!
Top Tips \ Chef’s Notes
- Spread the green beans out: Overcrowding leads to the green beans steaming instead of roasting, so try to keep your green beans to one even layer if possible. Use two baking sheets if you have a lot of green beans to cook with.
- Add garlic at the end: To avoid the garlic burning, add the minced garlic after roasting.
- Use a preheated baking sheet: For even crispier results, preheat your tray before adding the beans.
Other Ways to Cook Your Green Beans
Roasted green beans is my personal favorite way to cook green beans and maximize their flavor, but here are a few other ways you could cook them as a side dish:
Boiling/Steaming
Possibly the lowest effort way to cook green beans is to simply boil or steam them for 6-8 minutes until vibrant and tender. Add some flaky sea salt and a knob of butter before serving.
Air Fryer
Cook your green beans in the air fryer by following the same steps as in this recipe, then laying your green beans in a flat even layer in your air fryer basket. Cook them in the air fryer for 6-8 minutes at 200C | 400F until slightly crispy and tender. Top with the lemon, garlic, and cheese as in this recipe. Try my air fryer asparagus recipe or this air fryer cauliflower recipe next.

Storage
Fridge: Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 180°C (350°F) for 5 minutes or in the air fryer for 2 minutes.
Freezer: Not recommended, as roasted green beans lose their crisp texture when frozen. Freeze your green beans from fresh, and then roast them from frozen using my roasted frozen green beans recipe.
FAQs
Do I need to flip the beans while roasting?
It’s not necessary, but tossing them halfway through ensures even roasting.
Can I make these in an air fryer?
Absolutely! Cook at 200°C (400°F) for 8-10 minutes, shaking the basket halfway.
How do I keep them from getting soggy?
Don’t overcrowd the pan, and make sure the oven is fully preheated before roasting.
