Ingredients
220gplain flour
50gcocoa powder
150glight brown sugar
50gwhite caster sugar
1teaspoonbaking powder
pinchof salt
1ripe bananamashed
60gsmooth peanut butter
150mlalmond milk
50golive oil
50gdark chocolate chips
Method
Preheat your oven to 180 degrees C and line a 7 by 7 baking tin with baking paper.
In a large mixing bowl, combine all of the dry ingredients.
In a separate bowl, mash the banana and then combine with the peanut butter
Add the banana and peanut butter mix, olive oil, and almond milk to your dry ingredients and fold until just combined. Fold in the dark chocolate chips, reserving ⅓ to sprinkle over the top.
Pour the batter into your baking tin and smooth the top down with a spatula. Sprinkle over the remaining chocolate chips.
Bake for 25 minutes, and allow to cool completely before eating (I tend to find that putting brownies in the fridge for a couple of hours allows them to get that really delicious fudge-y texture).
