2-Ingredient Date Caramel

A super easy refined-sugar free date caramel recipe using just two ingredients! This healthier vegan caramel is naturally sweetened and takes just 10 minutes to make - perfect for a refined-sugar and fat-free alternative to traditional caramel recipes.

This date caramel recipe is so easy, takes under 10 minutes and is refined-sugar free with just two ingredients.

I first made this recipe when I was making some millionaire shortbread bars (recipe still being tested!) and wanted a healthier alternative for the caramel layer.

Enter dates.

Dates are naturally sweet with a gorgeous caramel flavour that makes it hard to believe they're a fruit! They're the natural option for a sweet, indulgent, sticky caramel sauce.

This recipe could be perfect paired with these protein flapjacks!

To make the 2-ingredient date caramel

This recipe requires just two things: hot water and chopped de-seeded dates.

Simply soak the dates in hot water for around 10 minutes, drain (reserving the water) and blend. Slowly add in more water to get your desired consistency.

A thicker caramel consistency can be perfect for spreading a thick layer over cakes and bakes, whereas more water or even a few spoonfuls of thick coconut milk can create a more sauce-like caramel for drizzling over desserts.

Modifications:

Potential modifications you could make to this recipe include adding:

  • A tablespoon of cacao powder for a chocolatey taste
  • Vanilla essence
  • Cinnamon
  • Coconut milk

Notes

This caramel is fantastic cold, but is also amazing heated up and thinned out with water or a little coconut milk for a more sauce-like consistency.
You could also stir in cinnamon powder or even cacao powder for a heavenly variation.
