This delicious vegetarian creamy beef pasta shell recipe is so easy to make and the perfect easy weeknight meal.


  • 300g shell pasta
  • 1 white onion, diced
  • 2 garlic cloves, minced
  • 250g vegetarian mince
  • 2tbsp tomato puree
  • 200ml vegetable stock
  • 150ml double cream
  • 50g mozzarella cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp parsley
  • 1 tsp oregano
  • 1tbsp olive oil


  1. Heat your oil in a pan and then add the diced onion and saute for 4-5 minutes.
  2. Meanwhile, get the pasta cooking separately according to the packet instructions.
  3. Add the garlic to the onion, and then add the vegetarian mince and cook for another 2-3 minutes.
  4. Add the tomato puree and seasonings, stir, then pour in the stock. Allow to simmer for 5 minutes on low heat.
  5. Add the cream, cooked pasta, and mozzarella and stir together until the cheese has melted.
  6. Top with more fresh parsley and enjoy!


You could also use cheddar cheese for a more cheesy pasta sauce. Add chili flakes for a touch of heat, or increase the cream for a creamier, milder sauce.

You could make this a one-pot meal by adding the pasta at the same time as the stock. You will need to add more stock and stir the pasta frequently to ensure it doesn't stick to the bottom of the pan.
