This sausage and peppers recipe is an Italian-American sheet pan classic and is easy healthy comfort food at its finest. It requires just a handful of easy ingredients and is ready in just 30 minutes.

You could serve your sausage and peppers traybake with rice, mashed potatoes, pasta, or – my favorite way – in crusty rolls loaded with marinara sauce and melty cheese! 

This recipe is ultra-filling and a fantastic weeknight-friendly dish that I know you’ll be craving for days after making it (when testing this recipe I may or may not have eaten several nights in a row..!). Ingredient Notes

Here are all the ingredients you’ll need for this sausage and peppers recipe. Note, that the exact quantities for each ingredient are provided in the recipe card at the bottom of this page!

  • Sausages: Use whatever type of sausage you most prefer for this recipe. I’m vegetarian, so I used vegetarian sausages (THIS brand), but you could use pork or chicken sausages. I’ve also seen some people use spicy Italian sausages which would work well.
  • Bell peppers: For this recipe, I used both red and green bell peppers for color and flavor (green peppers are slightly more bitter while red peppers are slightly sweeter). You could also use yellow or orange bell peppers if you like!
  • White Onion: A sliced white onion is the perfect accompaniment to the sausages and peppers, as it caramelizes while cooking to provide the most delicious flavor combination.
  • Garlic Cloves: I love the addition of lots of minced garlic (fresh) for this recipe. You could omit it or use garlic powder if you prefer.
  • Seasonings: I used a blend of salt, black pepper, Italian herbs, and dried oregano for this recipe. I also added a sprinkle of red pepper flakes to create an element of heat in this sausage and peppers recipe, but this is optional!
  • Red wine vinegar: Finally, a tablespoon of red wine vinegar adds just the right amount of tangy acidity to this recipe. Skip it if you must, but substitute with apple cider vinegar or white wine vinegar if you can’t source red wine vinegar!


  • In this recipe, I’ve cooked the sausages and peppers on a sheet pan in the oven. However, you could cook this recipe over the grill, in the air fryer, or in a cast iron skillet, too!
  • This recipe cuts the sausages into rounds to ensure they cook evenly and you get lots of crispy rounds of sausage. If serving in buns, you might prefer to keep the sausages whole.

How To Make This Easy Sausage and Peppers Recipe

This sausage and peppers recipe is so easy to make! Here’s a quick step-by-step instruction with some process shots – scroll down to the recipe card to see everything in one place.

Step 1) Slice Your Peppers & Onions

Deseed your bell peppers and cut them into slices about 0.5-inch thick (see pictured). Cut your onion into similar-sized slices, maybe slightly thinner, and arrange them on a baking sheet lined with baking paper.

Step 2) Cut Your Sausage Into Slices

Next, cut your sausages into 1-inch thick slices and add them to the baking sheet.

Step 3) Add Seasonings, Oil, & Vinegar

Sprinkle your seasonings, olive oil, and red wine vinegar over the bell peppers, onions, and sausages, and use a wooden spoon to gently coat everything fully.

Arrange the ingredients evenly on your baking sheet (ideally all in one flat layer to ensure everything gets nicely crispy). 

Step 4) Bake

Cook the sausages and peppers in the preheated oven at 390F for 22 – 28 minutes, or until the sausages and browned and crispy on the edges, and the peppers and onions are roasted and slightly caramelized.

Serving Your Sausages and Peppers

I love this recipe because it’s so versatile. You could serve it on top of cheesy mashed potato, fluffy rice, or in subs with marinara sauce and provolone cheese. Delicious!

This recipe is perfect for meal prepping and storing to use throughout the week. Store any leftovers in an airtight container in the fridge for up to 3 – 5 days.

Best reheated in the oven, but this recipe is also fine to be reheated in the microwave on or on the hob!

  • 6 sausages
  • 2 Red peppers
  • 1 Green pepper
  • 1 White onion
  • 4 Garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian herbs
  • 1 tsp oregano
  • 1 tbsp red wine vinegar
  • 1 tsp red pepper flakes
  • ¼ cup fresh diced parsley


  1. Preheat your oven to 390F (200C) and line a baking sheet with parchment paper.
  2. Deseed your bell peppers and slice them into strips approximately 0.5-inches thick. Do the same with your white onion and add the vegetables to a baking sheet.
  3. Slice the sausages into rounds, then add them to the baking sheet too.
  4. Add the olive oil, red wine vinegar, and seasonings to the sausages, peppers, and onions, and mix everything together.
  5. Arrange the ingredients evenly on the sheet to lay flat, then place in the oven to cook for 22 - 28 minutes, or until the sausages and browned and crispy, and the vegetables are cooked and beginning to brown on the edges.
  6. Scatter over fresh parsley and serve!


Store any leftovers in an airtight container for up to 4 - 5days.,
