  • Chickpeas: The star ingredient. I love to use these jarred chickpeas as they're so much plumper than canned chickpeas, but canned chickpeas will work fine as well!
  • Crushed Tomatoes: Provide depth and body. Swap for diced tomatoes for a chunkier texture.
  • Sun-Dried Tomatoes: Add richness and umami flavor. Use fire-roasted tomatoes for a slightly different twist.
  • Vegetable Stock: Forms the base of the soup. You can use chickpea broth (aquafaba) or water + a stock cube.
  • Spinach: Adds freshness and extra nutrients. You can also use kale or Swiss chard.

The full recipe is below, but here's a quick step-by-step guide:

1. Sauté the Base

Heat your olive oil in a large pot and add the diced onion, carrot, and celery and cook for 5-6 minutes. Stir in the minced garlic and cook for another minute. Then, add the white wine to deglaze the pan.

2. Simmer the Soup

Add the chickpeas, crushed tomatoes, vegetable stock, and seasonings. Simmer the soup for 15-20 minutes to develop flavors and allow the vegetables to soften.

3. Blend for Creaminess

Use a hand blender to blend about ⅓ of the soup. This makes the broth thicker while keeping some texture.

Ingredients

  • 2 tablespoon olive oil
  • 1 white onion, diced
  • 1 medium carrot, diced
  • 1 stick of celery, diced
  • 2 garlic cloves, minced
  • 600g chickpeas
  • 400g crushed tomatoes
  • 60ml white wine (or apple cider vinegar)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 0.5 teaspoon paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 500ml vegetable stock
  • 7-8 sun-dried tomatoes, finely chopped
  • 1 lemon, zest and juice
  • 100g / 1 packed cup fresh spinach, chopped
  • 10g / ⅓ cup fresh dill, diced

Instructions

  1. Heat the oil in a pan and add the diced onion, carrot, and celery. Cook for 5-6 minutes, stirring often, then add the minced garlic and cook for another minute.

  4. Remove the bay leaf from the pan, and then use a handheld blender to blend about ⅓ of the soup for a thicker and creamier consistency.
  5. Stir the sun-dried tomatoes, lemon juice, and spinach into the soup and adjust your seasonings to taste. Cook for another 3 minutes or so until the spinach has wilted.
  6. Serve garnished with fresh dill and a drizzle of extra virgin olive oil.

Notes
