Smoked Tofu & Sweet Potato Summer Salad
A light, summery salad that's protein-packed with smoked tofu, as well as roasted sweet potato and salad vegetables.
When summer rolls around, sometimes there's nothing better for lunch than a salad. I don't mean the traditional interpretation of salad though, with just green leaves and nothing else. This salad has delicious, crispy smoked tofu and smokey-roasted sweet potato, topped with a tangy apple cider vinegar dressing.
This salad is going to leave you feeling satisfied and full, without feeling uncomfortable.
I love to crisp up my tofu for a warm aspect to the salad, but you could easily make this in advance to take to work with you and eat it cold - the choice is yours!

Tofu & Sweet Potato Summer Salad
A light and summery protein-packed salad with smoked tofu, roasted sweet potato, and a tangy apple cider vinegar dressing.
Ingredients
Salad
- 200g smoked tofu
- 150g sweet potato
- ½ cucumber
- 1 large tomato
- ½ red onion
- salad leaves
- 1 teaspoon paprika
- 1 teaspoon cumin
Dressing
- 2 tablespoon apple cider vinegar
- Handful chopped coriander
- 1 minced garlic clove
- salt & pepper
Instructions
- Chop your sweet potato into bite-size chunks and season with paprika and cumin and a drizzle of olive oil. Roast for 30 minutes.
- Meanwhile, chop your tofu into bite-size chunks and heat a pan with a little oil. Add your tofu and cook until crispy on the outside.
- Slice your red onion and cucumber finely, and chop your tomato finely. Mix these with your salad vegetables.
- To make the dressing, simply combine all the ingredients and stir well. You may want to add a sweetener such as a little maple syrup if the dressing is too tangy for you.
- Top the salad with your tofu and sweet potato chunks.
