Easy Baked Hash Browns

These easy hash browns are baked for a healthier alternative, vegan-friendly, and contain just minimal ingredients. Perfect for adding to a cooked breakfast without the extra calories!

The other day, I just had a huge craving for some home-made, crispy breakfast potatoes.

I looked through my cupboards: potatoes? Check. Onion? Check. Corn flour? Check. Spices? Yup.

I didn’t want to fry my hash browns though. In my experience, whenever I’ve tried to fry things they just end up extremely oily and unpleasant. So, these easy baked hash browns were born!

Easy & minimal ingredients

This vegan hash brown recipe uses:

  • Potatoes
  • White onion
  • Cornflour
  • Melted vegan butter
  • Spices & seasoning

That’s it! You could definitely add some carrot, sweet potato, or more vegetables to mix it up a bit.

A really important step when making these hash browns is to first grate your potatoes and then squeeze all the liquid out of them! You must do this or they won’t stick together.

I used a thin tea towel, but a muslin cloth would also be perfect for this step.

Then, grate the onion and add to the potato mix along with with your cornflour, melted vegan butter, and whatever spices you’ll be using. Mix, and you’re ready to bake!

Making baked hash browns the perfect shape

I made these hash browns into these perfect little circle shapes by using a muffin tin.

Simply spray the tin with some cooking spray, and then press your mix down firmly into each cup.

Once baked, allow them to cool slightly and then just slide them out of the cups with a fork of a spoon. Super easy!

You could definitely just try shaping the mix yourself with your hands, although they might fall apart a bit!

Baked Vegan Hash Browns

Yield: 8 mini hash browns or 4 large ones
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

These healthy baked hash browns are vegan, gluten-free, and contain just 5-ingredients! Make these ahead for the perfect meal prep breakfast or snack.

Ingredients

  • 3 large potatoes (~300g)
  • 1 white onion
  • 1.5 tbsp tapioca flour
  • 1 tbsp olive oil
  • salt and pepper

Instructions

  1. Preheat your oven to 200 degrees C | Gas Mark 7
  2. Using a box grater, grate your potatoes and rinse. Grate your onion, and then place both in a thin tea towel and squeeze out all excess moisture. Don't skip this step!
  3. Return the potato and onion mix to a bowl and add your tapioca flour, olive oil, seasoning, and any other herbs and spices you want to add in. Stir to fully combine.
  4. Get a muffin tray and spray the cups with some cooking spray. Fill each cup about halfway and press down firmly with a spoon so the hash browns hold together. Spray the tops with cooking spray and then place in the oven to bake for 25 minutes - 30 minutes.
  5. The tops should be golden brown when the hash browns are done. Leave them to cool for 5 minutes before using a spoon to get the hash browns out of the tray.

Notes

These are amazing hot paired with hot sauce and a tofu scramble but are also perfect for storing in your fridge until you need them. To reheat, place in the oven for 10 minutes or fry in a non-stick pan for 5 minutes.
