- Sun-Dried Tomatoes: Provide an intense, slightly sweet tangy flavor. If unavailable, try cherry tomatoes roasted in olive oil.
- Chickpeas: Use canned or jarred chickpeas for convenience. If using dried chickpeas, soak and cook them first.
- Vegetable Stock: Enhances the depth of flavor. You can also use chickpea broth (aquafaba) or water with a stock cube. I tend to use jarred chickpeas (Bold Bean Co specifically!) and use the water the chickpeas come in to mix with a stock cube and some hot water for added flavor!

- Hard Cheese (Pecorino or Parmesan): Adds a sharp, salty umami. Use a vegan Parmesan substitute if needed.

How To Make This Marry Me Chickpeas Recipe
The full recipe is below, but here's an overview with tips:
1. Sauté the Aromatics
Heat the sun-dried tomato oil in a pan, then add the diced red onion and sauté for 5-6 minutes until softened. Then, stir in the minced garlic and cook for another minute.
2. Build the Flavor
Stir in your tomato paste and sun-dried tomatoes and cook both for 2-3 minutes until the tomato paste deepens in color.



3. Add the Chickpeas & Stock
Add your chickpeas and seasonings, stirring until well-coated. Then, pour in the vegetable stock and simmer the pan for 5 minutes.
4. Finish with Cream & Cheese
Stir in your chopped fresh or frozen spinach, cooking until wilted. Pour in heavy cream, then add grated hard cheese. Mix everything until combined, then finish with shredded basil and a squeeze of lemon juice.

I make some variation of this "Marry Me" dish almost weekly, so I've picked up a lot of tips along the way! Here's a few top tips for making the most out of this dish.
- Let the tomato paste cook down before adding the remaining ingredients. This enhances the deep, rich flavor.
- Don't skip the lemon juice! It balances the creaminess and adds brightness. Alternatively, you could consider adding a splash of white wine and letting it cook down just before you add the tomato paste.

Marry Me Chickpeas
These Marry Me Chickpeas are a delicious high-protein twist on the viral Marry Me Chicken dish. Nutty chickpeas are cooked in a Tuscan-inspired creamy sauce with sun-dried tomatoes, spinach, and fresh basil.
Ingredients
- 2 tablespoon sun-dried tomato oil
- 1 red onion, diced
- 2 garlic cloves, minced
- 2 tablespoon tomato paste/puree
- 6-7 sun-dried tomatoes, diced
- 1.5 teaspoon smoked paprika
- 1 teaspoon oregano
- 0.5tsp cayenne chili pepper
- 0.5 teaspoon onion powder
- 0.5 teaspoon garlic powder
- Salt and pepper to taste
- 700g jarred chickpeas, drained and rinsed
- 200ml vegetable stock
- 120ml heavy cream
- ½ cup hard cheese (e.g. Pecorino)
- 1 cup chopped spinach
- 6-7 fresh basil leaves, shredded
- ½ lemon, juice
Instructions
- Heat the oil in your pan, and add the red onion and saute for 5-6 minutes, stirring occasionally.
- Add the garlic and cook for another minute.
- Add in the tomato paste and the diced sun-dried tomatoes, cooking for 2-3 minutes and stirring into the onions/garlic until the tomato paste has deepened in color.
- Add the chickpeas and the seasonings, and stir until the chickpeas are fully coated in the seasonings and other ingredients. Add the stock and simmer for 5 minutes.
- Stir in your spinach until it’s wilted (2-3 minutes), then pour in the cream and add the hard cheese.
- Stir everything together until combined and then top with the shredded basil leaves and a squeeze of lemon juice.
Notes
If you have any leftovers, store them in an airtight container in the fridge for up to 3-4 days. You could also freeze this recipe, although the spinach and basil may change in texture upon defrosting.
