- Cooking from frozen: Cooking your vegetables from frozen does have the risk of the brussel sprouts going soggy as they essentially defrost before cooking in the oven. Roasting them without any oil or seasonings at first helps remove excess moisture without the sprouts turning soggy.
- Don't cut your sprouts: Trying to halve a frozen brussel sprout is not only difficult, it's dangerous! Avoid cutting your sprouts and just roast them whole.
- Size: If you are using button brussel sprouts - which are smaller - you'll need to adapt your roasting times accordingly.
Storage
These roasted frozen brussel sprouts are best served immediately when they are hot and crispy from the oven! You could store leftovers in an airtight container for up to 3 days, but they won't be as crispy and delicious even when reheated.

Ingredients
- 250g frozen brussel sprouts
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 20g grated hard cheese
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 220C | 395F
- Line your baking tray with parchment paper and tip the brussel sprouts onto it. Arrange them so they’re spread evenly on the tray with a gap between each sprout (this lets them get super crispy in the oven!)
- Roast the brussel sprouts for 12 - 15 minutes.
- Remove them from the oven, and drizzle over your olive oil, garlic powder, flaky salt, and black pepper.
- Toss the brussel sprouts gently to ensure they’re fully covered, then return the baking tray to the oven for a further 15 minutes.
- Remove from the oven and drizzle over the balsamic vinegar and hard cheese before serving!
Notes
This recipe also works with fresh brussel sprouts, but you can toss them in the olive oil and seasonings and roast in the oven for 15 - 25 minutes rather than the two-part step as they won’t go soggy. Slice your brussel sprouts in half for crispy middles.
