Homemade Vegan Nando's Bowl
This homemade vegan Nando's bowl is like a healthier, vegetarian-friendly Nando's meal - with the classic spicy rice and this marinated tofu in a Nando's sauce. It's easy, packed with flavour, and ready in under 30 minutes.
This is a great meal to cook for yourself when you don't want to spend money on a takeaway - and the tofu cooked in cornflour until crispy and then coated in a spicy sauce is just spot on.

Meal Components:
- Tofu: The tofu in this recipe is coated in cornflour and seasonings, air-fried, and then coated in a Nandos marinade. Instead of tofu, you could also use a meat substitute.~
- Spicy rice: I've used my spicy rice recipe here - it's a homemade copycat version of the super popular Nando's rice.
- Sides: I served mine with a mixed salad, but you could also add corn on the cob, tender-stem broccoli, peas, garlic bread, or roasted green beans.
Storing
Store any leftovers in air-tight containers for 3-4 days in the fridge. Make sure your rice, especially, is piping hot before eating.

Tofu Nando's Bowl

Ingredients
For the Tofu:
- 200 g extra-firm tofu
- 2 tablespoon cornflour
- 1 teaspoon cajun spice
- 0.5 teaspoon oregano
- 0.25 teaspoon cayenne chili pepper
- Salt and pepper
- 1 tablespoon olive oil
- 3 tablespoon Nando's marinade sauce
- 2 servings spicy rice
- Mixed salad
Method
- Prepare your spicy rice according to the recipe instructions.2 servings spicy rice
- While that's cooking, prepare the tofu.200 g extra-firm tofu
- Slice your tofu into 2-3 cm cutlets, then sprinkle over the cornflour and seasonings and make sure both sides are fully coated.2 tbsp cornflour, 1 tsp cajun spice, 0.5 tsp oregano, 0.25 tsp cayenne chili pepper, Salt and pepper
- Coat the tofu "steaks" with some olive oil, then air fry at 200C for 15 minutes or fry in a pan for 5-6 minutes until crispy on both sides.1 tbsp olive oil
- Add the marinade to a pan on medium heat, then add the tofu to get it fully coated. Cook for 3-4 minutes on each side.3 tbsp Nando's marinade sauce

Notes
You could also bake the tofu if you don't have an air fryer and would prefer not to fry it - I would recommend baking for 15 - 20 minutes, flipping halfway through.
You could also serve the tofu and spicy rice with some corn on the cob, tenderstem broccoli, or peas.
