Easy Vegan Protein Oats With Stewed Blueberries

This easy vegan protein oats recipe with stewed blueberries is an absolute staple of mine, especially when I want a big filling breakfast/brunch to keep me full and energized all morning.

Oatmeal is an easy meal to make in concept, but anyone who has had boring, plain oats will know that it’s very easy to get oatmeal wrong.

I love this recipe with stewed blueberries because it’s super quick, simple, a great way to pack in more nutrients, and really elevates the look of your oats. Plus, blueberries.

Vegan protein powder

I also like adding a scoop of vegan protein powder to my oats on morning where I want a big, filling breakfast to keep me going most of the day.

This step is totally optional – but if you do worry that you’re missing out on protein, it’s an easy way to get a little more of this macro into your diet. Another plus is that adding protein powder to oats really bulks them up, so you feel like you’re getting more in your bowl! Win!

A few of my personal favourite vegan protein powders include Bulk Powders banana caramel, MyProtein smooth chocolate soy isolate protein powder, and Vega vanilla protein powder (although this does give the oats a slightly green tinge!).

Stewed blueberries

I love making this recipe with fresh blueberries straight from the fridge and a sprinkle of cinnamon, but frozen blueberries work just as well.

Likewise, if all you have is raspberries or mixed berries, these are also awesome stewed and poured over your oatmeal, so feel free to use whatever you have!

Toppings

In the photo, I topped my vegan protein oats with the stewed blueberries, a sprinkle of granola, some flaxseed, and a drizzle of some homemade toffee sauce I had leftover in the fridge.

I also love topping my oats with nut butter, maybe some coconut yoghurt, more fresh fruit, or even a chocolate or two if you’re feeling indulgent…

Easy Protein Oats With Stewed Blueberries

Easy oatmeal made with vegan protein powder and plant-based milk, topped with cinnamon stewed blueberries for an easy, nutritious breakfast ready in under 10 minutes.

Ingredients

  • 40g steel cut oats
  • 200ml unsweetened almond milk
  • 1 scoop vegan protein powder
  • handful of blueberries
  • 1 tsp cinnamon
  • Any other toppings (granola, peanut butter, seeds, nuts etc)

Instructions

  1. Place your blueberries and the cinnamon in a small saucepan and stew over a medium-low heat, stirring occasionally until the berries start to breakdown.
  2. Meanwhile, place your oats and about two thirds of the plant-based milk in a microwave proof bowl (or a separate saucepan if using). Heat for 1 minute, stirring and adding more liquid as needed.
  3. Once cooked, add your protein powder and the rest of the milk and stir.
  4. Top the oats with your blueberry mix and any other toppings you are using.
