This is also a great low-calorie option to enjoy a meal that’s pizza-esque but without being so high in calories!

Why You’ll Like Vegan Tortilla Pizza

I’ll level with you. If you make this and expect to get aaaalll the goodness of a thick-crusted, doughy pizza oozing with sauce, cheese, and toppings, you might be a little disappointed. If you prepare yourself for a crispy tortilla base, tomato sauce, vegan cheese, and whatever toppings float your boat, however, then you’ll love this recipe.

How To Make A Vegan Tortilla Pizza

These tortilla pizzas are so easy to make that it’s really no wonder they’ve become a staple in my household. If you’re ever craving a quick and easy lunch that also feels like a bit of a treat, I urge you to try this!

To make your vegan tortilla pizza, simply follow these steps:

Step 1) Prepare Your Tortilla & Toppings

Preheat your oven to 180C and place your tortilla on your baking sheet. Get your toppings ready.

Step 2) Spread Your Sauce Over Your Tortilla

Spread the sauce of your choice over your tortilla to start. You could use tomato puree mixed with a little water, a tomato pasta sauce, pesto, bbq sauce…whatever you most prefer. Ideally, smooth a thin layer of sauce all over the tortilla (leaving a small edge for the “crust”) to avoid the tortilla going too crunchy and dry in the oven.

Step 3) Add Your Toppings

Next, add your toppings of choice. I’ve included some ideas below, but some great toppings for any vegan tortilla pizza include mushrooms, thinly sliced red pepper, onion, tempeh or perhaps a vegan pepperoni, hummus, and sweetcorn.

Add vegan cheese too, if you want, but I do prefer my pizza without cheese altogether so I can enjoy the flavors of the other toppings.

Step 4) Bake for 10 Minutes

Finally, place your vegan tortilla in the oven and bake for 10 minutes. The toppings should be cooked and the edges of the tortilla should be nice and crispy.

Potential Toppings for Vegan Tortilla Pizza

My favorite thing about having a vegan tortilla pizza for lunch is how versatile they are. You don’t even need vegan cheese – I like topping mine with veggies and hummus before baking for an equally yummy variation. You could also try it with my spicy tomato marinara sauce!

Storing Your Tortilla Pizza

This recipe is best enjoyed hot from the oven – you could store your leftovers but reheating the tortilla pizza a second time risks it going too hard and dry in the oven.

How To Make This Vegan Tortilla Pizza Gluten-Free?

For an even lower-calorie version of this recipe, or a gluten-free version, I’ve been loving the BFree wraps recently, made with quinoa and chia seeds. They just leave me feeling a little ‘lighter’ and it’s good to have the option for a lower-calorie alternative.

What Should I Do If My Tortilla Pizza Isn’t Cooked On The Bottom?

If the bottom of the tortilla is still soft, you could place the tortilla on a pizza tray to crisp up the bottom, or simply cook for another couple of minutes.

Unlike a pizza, though, if the bottom is soft, the tortilla is still edible, so it doesn’t matter if it’s still a little soft!

Can I add vegan cheese to my pizza?

Absolutely! Sprinkle over your favorite vegan cheese before adding your toppings. I simply prefer not to add vegan cheese, but that’s completely down to your personal preferences.

Which Wraps Should I Use?

I use the white Mission brand tortilla wraps for my vegan tortilla pizzas. You could use a different brand or variety, though, such as a seeded wrap or multigrain tortilla.

Cook Time: 10 minutes
Total Time: 15 minutes

A crispy tortilla base baked with tomato sauce, vegan cheese, and whatever toppings you fancier make for the perfect lunch or light dinner.

Ingredients

  • 1 tortilla
  • 1-2 tbsp tomato & basil passata (tomato paste also works)
  • 30g vegan shredded cheese
  • Toppings (pick your options!):
  • Red onion
  • Bell pepper
  • Mushroom
  • Artichokes
  • Tempeh
  • Crumbled tofu
  • Sun dried tomatoes or fresh tomatoes
  • Fresh basil
  • Dried red pepper flakes
  • Oregano
  • A drizzle of olive oil

Instructions

  1. Pre-heat the oven to 190 degrees C
  2. Place your tortilla on a baking tray
  3. Spread the tomato sauce over the tortilla, leaving a small gap for the 'crust'
  4. Top with your vegan cheese and toppings
  5. Drizzle a little olive oil over the pizza, and top with red pepper flakes for spice, oregano, and salt and pepper
  6. Bake for 10 - 15 minutes until the tortilla has browned and crisped up around the edges
