Ultra Refresing Watermelon Fries (with Berry Dip)

This watermelon fries recipe is the kind of recipe that screams summer! Juicy watermelon cut into fun crinkle-cut “fries” with a tangy-sweet berry dip that tastes like sunshine in a bowl. It’s fresh, colourful, and takes less than 15 minutes to make.

I’ve made this for BBQs, brunch spreads, and even as a healthier dessert option, and it’s always the first thing to disappear (especially when there are kids in attendance!). The crinkle cutter makes the watermelon look like real fries (and adds a nice grip for dipping), but you can absolutely just cut them into sticks if you don’t have one.

The berry dip is made with just three ingredients, but it’s incredibly vibrant and naturally sweet – plus, it pairs perfectly with the cool crunch of watermelon.

Ingredient Notes

  • Watermelon – Go for a seedless one if you can; it’s less messy and easier to eat. Pick a watermelon that feels heavy for its size with a deep, hollow sound when tapped – that’s how you know it’s ripe.
  • Fresh mint leaves – Adds brightness and a little herbal lift; you can also use basil for a slightly peppery twist.
  • Strawberries & raspberries – This mix makes a beautifully balanced dip – strawberries bring sweetness, raspberries bring tartness. Frozen berries work in a pinch, but you’ll want to thaw and drain them well.
  • Honey – Rounds out the tartness of the berries; swap for maple syrup or agave to make it vegan.

How to Make Watermelon Fries (with Berry Dip)

1. Prep the watermelon

Cut the watermelon in half, then slice into 0.5-inch thick slabs. Use a crinkle cutter (or a sharp knife) to cut into fry-shaped sticks, discarding the rind.

2. Make the dip

Blend the strawberries, raspberries, and honey in a blender or food processor until smooth. Taste and adjust sweetness if needed.

Pour the berry dip into a small serving bowl and arrange the watermelon fries around it. Sprinkle with fresh mint leaves for garnish.

  • Serve chilled – Keep the watermelon in the fridge until right before serving for maximum crunch and refreshment.
  • Extra fancy – Add a squeeze of lime juice and a pinch of salt over the watermelon sticks for a Mexican-inspired twist.
  • No crinkle cutter? – A sharp chef’s knife works fine; just aim for uniform sizes so the “fries” look neat.
  • Make ahead – Cut the watermelon and make the dip up to 4 hours in advance; store separately in the fridge and assemble just before serving.

Storage

  • Fridge – Store cut watermelon in an airtight container for up to 3 days. The berry dip will also keep for 2–3 days in the fridge.
  • Freezer – Not recommended – watermelon becomes mushy once thawed.

Yes! Blackberries or blueberries would also be delicious – or mix and match with whatever’s in season.

  • 1 watermelon
  • ¼ fresh mint leaves

Fruit dip

  • 1 cup strawberries, tops removed
  • 1 cup raspberries
  • 1 tbsp honey

Instructions

  1. Cut your watermelon in half, and then into 0.5-inch thick slices. 
  2. Then, use a crinkle cutter to cut the watermelon into fry shapes.
  3. Make the dip by blending the strawberries, raspberries, and honey. Taste and adjust the amount of honey as needed.
  4. Pour the sauce into a dipping bowl, and arrange the watermelon fries around it, then top with the mint leaves.

Notes
